This Mombasa Peri Peri sauce is made up of several layers of red chilli on a flavour base of lemon and garlic with black pepper and parsley. It is one of the iconic flavours of the east coast of Africa and this one hails from Diani Beach near Mombasa.
Peri Peri is perfect for grilled chicken and prawns. Rub a little sauce onto chicken half an hour before grilling (for prawns, grill immediately). Sprinkle a little more Peri Peri before serving with rice and a nice fresh salad.
